Chef Eric spent the afternoon cutting up a pig that came in Wednesday morning. The pig came from Wild Oats Farm in Scottsville, Va which features Organic and Grass fed livestock.

The fresh Pork Belly
The meat goes into dishes like the Grilled Pork Belly on our dinner menu and the Barbecue on our late night.

Being that the C&O is always committed to quality and freshness of our food, we are dedicated to using ingredients from the farms all around Virginia. The farms who help ensure the organic, fresh ingredients include…
Planet Earth Diversified, Majesty Farms, Oak Hill Farms, Crown Orchard, Rag Mountain Trout, Caromont Farms, Everona’s Dairy, Borrowed Ground Collective, Double H Farms, Radical Roots, Down Branch Farms, Critzer Family Farms, and Singing Earth Produce.
…In junction with the farms, the Local Food Hub continues to supply us with much of our produce, meats, eggs, and dairy.
